No Bake Sugar Cookie Bars

Ingredients

  • 1 cup nut butter (I used @justins cashew butter)
  • 1/2 cup coconut flour
  • 1/2 cup maple syrup
  • 2 tbsp vanilla collagen or protein (optional, sub 1 tsp vanilla extract if vegan or use a vegan protein, I used @furtherfood vanilla collagen)
  • 1 tsp cinnamon

Icing

  • 1/2 cup coconut butter
  • 1/2 cup maple syrup

Preparation

  1. Mix together all the ingredients until well combined.

  2. Line a brownie pan with parchment paper.

  3. Shape the mixture into a square and smooth it out; it may not fill the entire pan.

  4. Place in the freezer for at least 2 hours.

  5. Remove from the freezer and top with the icing.

  6. To make the icing, melt 1/2 cup coconut butter and 1/2 cup maple syrup in the microwave for 30 seconds and mix well; prepare this 10-15 minutes before needed.

  7. Return to the freezer for 30 minutes to an hour to let the icing harden.

  8. Enjoy the cookie bars; store in the fridge or freezer for later.
