No Bake Sugar Cookie Bars
Ingredients
- 1 cup nut butter (I used @justins cashew butter)
- 1/2 cup coconut flour
- 1/2 cup maple syrup
- 2 tbsp vanilla collagen or protein (optional, sub 1 tsp vanilla extract if vegan or use a vegan protein, I used @furtherfood vanilla collagen)
- 1 tsp cinnamon
Icing
- 1/2 cup coconut butter
- 1/2 cup maple syrup
Preparation
Mix together all the ingredients until well combined.
Line a brownie pan with parchment paper.
Shape the mixture into a square and smooth it out; it may not fill the entire pan.
Place in the freezer for at least 2 hours.
Remove from the freezer and top with the icing.
To make the icing, melt 1/2 cup coconut butter and 1/2 cup maple syrup in the microwave for 30 seconds and mix well; prepare this 10-15 minutes before needed.
Return to the freezer for 30 minutes to an hour to let the icing harden.
Enjoy the cookie bars; store in the fridge or freezer for later.
