No Bake Lemon Sugar Cookie Bars

Ingredients

  • 1 cup cashew butter
  • 1/2 cup coconut flour
  • 1/2 cup maple syrup
  • 2 tbsp @ancientnutrition collagen protein
  • 1/4 cup lemon juice
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tbsp lemon zest

Icing

  • 1/2 cup coconut butter
  • 1/2 cup maple syrup
  • 1 tbsp lemon juice

Preparation

  1. Mix all of the bar ingredients together.

  2. Line a brownie pan with parchment paper.

  3. Smooth it out and put in the freezer for at least 2 hours.

  4. Remove from the freezer.

  5. Top with the icing.

  6. To make the icing: Melt the coconut butter for 30 seconds in the microwave and mix it with the maple syrup and lemon juice.

  7. Make the icing about 10-15 minutes before you need it.

  8. Put back in the freezer for 30 minutes to an hour to let it harden.

  9. Enjoy.
