No Bake Lemon Sugar Cookie Bars
Ingredients
- 1 cup cashew butter
- 1/2 cup coconut flour
- 1/2 cup maple syrup
- 2 tbsp @ancientnutrition collagen protein
- 1/4 cup lemon juice
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tbsp lemon zest
Icing
- 1/2 cup coconut butter
- 1/2 cup maple syrup
- 1 tbsp lemon juice
Preparation
Mix all of the bar ingredients together.
Line a brownie pan with parchment paper.
Smooth it out and put in the freezer for at least 2 hours.
Remove from the freezer.
Top with the icing.
To make the icing: Melt the coconut butter for 30 seconds in the microwave and mix it with the maple syrup and lemon juice.
Make the icing about 10-15 minutes before you need it.
Put back in the freezer for 30 minutes to an hour to let it harden.
