Peanut Butter Date Oat Bars

Ingredients

  • 1 Cup Oats
  • 1/4 Cup Ground Flaxseed
  • 1/3 Cup Sunflower Seeds
  • 2 Tbsp Chia Seeds
  • 1/4 tsp Salt
  • 4 Torn Up Dates
  • 2/3 Cup Desiccated Coconut
  • 3 Tbsp Peanut Butter
  • 1/4 Cup Coconut Sugar or pure Maple Syrup
  • 1 Tsp Cinnamon
  • 2-3 Tbsp Olive Oil

Chocolate

  • 1 100g Slab Of Chocolate for Drizzle

Preparation

  1. Preheat your oven to 175°C

  2. On a baking tray toast your oats and sunflower seeds in the oven until slightly golden

  3. Line a square baking tin with parchment paper

  4. In a large bowl mix your flaxseed, coconut, cinnamon, chia seeds, salt and torn up dates

  5. Remove your oats and sunflower seeds from the oven and add to your bowl

  6. In a small pot add your coconut sugar, peanut butter, olive oil and 1/4 cup of water. Melt and combine all together

  7. Add to your bowl of ingredients and mix well

  8. Tip over into your baking tray and firmly push down with another piece of baking paper until it is all nice and tightly packed

  9. Bake for 25 minutes until golden brown on the edges

  10. Once done, allow to cool and slice into desired squares. If you would prefer them crunchier, return to the oven spreading out the squares on a baking tray and baking for another 5-10 minutes; remember they crunch up more once cool

Chocolate drizzle

  1. Melt your chocolate over a double boiler and drizzle over your bars or simply dunk them in
