Savory Breakfast Bowl with Eggs and Sweet Potato
Ingredients
- 2 eggs
- ghee
- 1/2 avocado
- spinach
- red pepper flakes
- tomatoes
- Japanese sweet potato
Preparation
Preheat oven to 400°F and bake Japanese sweet potato for 20 minutes on each side.
Slice the sweet potato into fry shapes if desired.
Fry two eggs in ghee.
Sauté spinach with red pepper flakes.
Assemble the bowl with eggs, sweet potato fries, sautéed spinach, tomatoes, and avocado.
