Easy No-Churn Peach Sorbet

Ingredients

  • 2 pounds (about 5-6 large) ripe peaches, pitted and small diced
  • 3/4 cup granulated sugar
  • 3/4 cup water
  • 1 1/2 limes, juiced
  • 1/4 teaspoon ground cinnamon, optional
  • Pinch salt

Preparation

  1. Freeze peaches in a single layer until solid, about 6 hours or overnight.

  2. Meanwhile, bring sugar, water, lime juice, cinnamon, and salt to a boil in a small saucepan. Reduce heat to rapidly simmer for about 5 minutes. Remove from heat and cool completely. Simple syrup can be made up to 1 month ahead of time and stored in an airtight container in the refrigerator.

  3. Add frozen peaches and simple syrup to a food processor and purée until completely smooth, about 7-8 minutes. Serve sorbet immediately for a creamier texture similar to soft-serve, or transfer to an airtight container for 1-2 hours before scooping into bowls.
