German Spekulatius Mascarpone Mousse

Ingredients

  • 100 g Spekulatius cookies
  • 400 g heavy cream
  • 2 medium egg whites
  • 125 g mascarpone
  • 2 tablespoons sugar
  • 1 tablespoon Amaretto

Preparation

  1. Finely grind Spekulatius cookies in a food processor or place in a freezer bag and crush with a rolling pin until finely crumbled

  2. Whip the heavy cream until stiff and set aside

  3. Whip the egg whites until stiff

  4. In a bowl mix mascarpone sugar Amaretto and the cookie crumbs

  5. Fold half of the whipped cream into the mascarpone mixture

  6. Fold in the remaining whipped cream

  7. Fold in the whipped egg whites

  8. Prepare six 125 ml dessert glasses

  9. Fill the glasses with the mousse

  10. Chill for at least 1.5 hours or until ready to serve

  11. Decorate with additional Spekulatius cookies if desired
