Raspberry Mascarpone Cream Dessert in Glasses

Ingredients

  • 300 g frozen raspberries
  • 50 g powdered sugar
  • 3-4 tablespoons amaretti cookies
  • 250 g mascarpone
  • 200 g heavy cream
  • 50 g granulated sugar
  • 150 g low-fat quark

Preparation

  1. Reserve 100 grams of frozen raspberries in the freezer

  2. Let the remaining 200 grams of raspberries thaw slightly, then puree with powdered sugar

  3. Set aside 2 tablespoons of the raspberry puree for garnish

  4. Coarsely crush the amaretti cookies and divide among four 200 ml dessert glasses

  5. Beat mascarpone, heavy cream, and granulated sugar with an electric mixer until a firm cream forms

  6. Stir in the low-fat quark

  7. Layer the cream and raspberry puree alternately in the glasses

  8. Chill the dessert for about 30 minutes

  9. Garnish with the reserved frozen raspberries and the remaining raspberry puree
