No Bake Mascarpone Cookie Cream Dessert

Ingredients

For the cream

  • 220g chocolate chip cookies
  • 250g mascarpone
  • 65g powdered sugar
  • 120g plain yogurt
  • 1 tsp vanilla extract
  • 100g heavy cream
  • 1/2 packet vanilla sugar

For decoration

  • 8 chocolate chip cookies

Preparation

  1. Prepare 4 dessert glasses (250 ml each)

  2. Grind 70g of the chocolate chip cookies in a food processor to fine crumbs

  3. Place mascarpone in a mixing bowl and add sifted powdered sugar

  4. Mix with plain yogurt and vanilla extract until smooth and lump-free

  5. In a separate bowl, whip the heavy cream until stiff, slowly adding vanilla sugar

  6. Fold the whipped cream into the cream mixture, then fold in the cookie crumbs

  7. Crush the remaining 150g of cookies by hand to coarse crumbs

  8. Place the cookie cream in a piping bag and cut the bottom about 1 cm

  9. Fill each dessert glass one-third full with the cream

  10. Sprinkle the coarse cookie crumbs to cover the cream layer

  11. Pipe more cream on top

  12. Decorate each glass with two mini cookies and sprinkle some cookie crumbs in the center

  13. Refrigerate; the dessert lasts about 2 days though the cookies may soften

Tip

  1. For winter, add a pinch of gingerbread spice and 1/4 tsp cinnamon to create a seasonal dessert
