Vegan Chocolate Cupcakes with Raspberry Frosting
Ingredients
Chocolate cupcakes
- 1 dl aquafaba
- 1 dl brown sugar
- 0.5 dl white sugar
- 0.5 dl coconut oil
- 1 dl cacao powder
- 2 dl flour
- 1 tsp vanilla powder
- 1 tsp baking powder
- A pinch of salt
Raspberry frosting
- 100 g cream cheese
- 25 g vegan butter
- 1 dl frozen raspberries
- 8 dl powdered sugar
Preparation
Set the oven to 200 degrees.
In a bowl, whisk sugar and aquafaba together.
Add the coconut oil and stir.
In another bowl, combine all the dry ingredients.
Add the dry ingredients to the wet and stir until you have a smooth batter.
Pour the batter into 6 cupcake forms and put the cupcakes in the oven for about 15 minutes.
Meanwhile, make the frosting.
Frosting
Defrost the raspberries.
Add to a bowl with the rest of the ingredients and whisk everything together.
Set in the fridge for 1 hour before adding it on top of the cupcakes.
