3-Ingredient Sweet Potato Burgers

Ingredients

  • 2 medium sweet potatoes
  • 2 flaxseed eggs
  • 2 tablespoons chickpea flour

Preparation

  1. Cook the sweet potato at 180 degrees Celsius in the oven for around 40-50 minutes until soft.

  2. To make the flaxseed eggs, add 2 tablespoons flaxseed to 3 tablespoons water (x2).

  3. Once the sweet potato is cooked, roughly cut it and mash it up (keep the skin on).

  4. Add the flaxseed eggs and chickpea flour and mould into burgers.

  5. Heat olive oil in a pan on a medium-high heat and add the burgers.

  6. Cook on both sides until crispy and enjoy.
