Cheesy Broccoli Pasta
Ingredients
- 2 cups unsweetened soy milk
- 1 tbsp vegan butter
- 1/2 cup shredded vegan cheese
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp sea salt
- black pepper
Preparation
Package tenderstem broccoli, trimmed OR 1 small head broccoli, cut into florets
Pasta (any kind will do!)
Make the cheese sauce by heating plant milk in a large saucepan, along with vegan butter and cheese, nutritional yeast, garlic and onion powder, and sea salt. once the cheese has melted, add broccoli and simmer until softened and cooked to your liking. once broccoli is cooked, slowly add cornstarch slurry to the sauce, stirring while you do to avoid lumps from forming
Add cooked pasta to the sauce and mix everything together until noodles are thoroughly coated in sauce. top with freshly ground black pepper and if you like it extra cheesy, a sprinkle of vegan parm
