Green Goddess Chickpea Salad Wrap
Ingredients
- 1 can chickpeas
- 2 celery stalks
- 2 green onions
- 1 garlic clove
- 1/4 dill pickles
- 1/4 cup packed basil
- 1/4 cup parsley
- 1/4 cup vegan mayonnaise
- 1/4 cup vegan sour cream
- 2 tablespoons water
- 2 tablespoons tahini
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- Sea salt and black pepper to taste
- Lavash bread
- Cucumbers
Preparation
Mash chickpeas with a potato masher or fork in a mixing bowl, add chopped celery, green onion, pickles, and garlic, and mix well
In a blender, combine the remaining ingredients until smooth
Add the dressing to the chickpea mixture, wrap in lavash bread, and top with waffle-cut cucumbers
