Green Goddess Chickpea Salad Wrap

Ingredients

  • 1 can chickpeas
  • 2 celery stalks
  • 2 green onions
  • 1 garlic clove
  • 1/4 dill pickles
  • 1/4 cup packed basil
  • 1/4 cup parsley
  • 1/4 cup vegan mayonnaise
  • 1/4 cup vegan sour cream
  • 2 tablespoons water
  • 2 tablespoons tahini
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • Sea salt and black pepper to taste
  • Lavash bread
  • Cucumbers

Preparation

  1. Mash chickpeas with a potato masher or fork in a mixing bowl, add chopped celery, green onion, pickles, and garlic, and mix well

  2. In a blender, combine the remaining ingredients until smooth

  3. Add the dressing to the chickpea mixture, wrap in lavash bread, and top with waffle-cut cucumbers
