Green Goddess Chickpea Salad Wrap

Ingredients

  • 1 can chickpeas drained & rinsed
  • 2 celery stalks finely chopped
  • 2 green onions finely chopped
  • 1 garlic clove minced
  • 1/4 cup dill pickles finely chopped
  • 1/4 cup packed basil
  • 1/4 cup parsley
  • 1/4 cup vegan mayo
  • 1/4 cup vegan sour cream
  • 2tbl water
  • 2 tbl tahini
  • 1tsp lemon zest
  • 2 tbl lemon juice
  • sea salt/black pepper to taste

Preparation

  1. Mash the chickpeas in a mixing bowl with a potato masher or the back of a fork, then add the chopped celery, green onions, pickles, and garlic and mix well

  2. Combine the remaining ingredients in a blender until smooth

  3. Add the dressing to the chickpea mixture, then wrap the mixture in lavash and top with waffle-cut cucumbers
