Green Goddess Chickpea Salad Wrap
Ingredients
- 1 can chickpeas drained & rinsed
- 2 celery stalks finely chopped
- 2 green onions finely chopped
- 1 garlic clove minced
- 1/4 cup dill pickles finely chopped
- 1/4 cup packed basil
- 1/4 cup parsley
- 1/4 cup vegan mayo
- 1/4 cup vegan sour cream
- 2tbl water
- 2 tbl tahini
- 1tsp lemon zest
- 2 tbl lemon juice
- sea salt/black pepper to taste
Preparation
Mash the chickpeas in a mixing bowl with a potato masher or the back of a fork, then add the chopped celery, green onions, pickles, and garlic and mix well
Combine the remaining ingredients in a blender until smooth
Add the dressing to the chickpea mixture, then wrap the mixture in lavash and top with waffle-cut cucumbers
