Green Goddess Chickpea Salad Wrap
Ingredients
- 1 can chickpeas, drained and rinsed
- 2 celery stalks, finely chopped
- 2 green onions, finely chopped
- 1 garlic clove, minced
- 1/4 dill pickles, finely chopped
- 1/4 cup packed basil
- 1/4 cup parsley
- 1/4 cup vegan mayo
- 1/4 cup vegan sour cream
- 2 tablespoons water
- 2 tablespoons tahini
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- sea salt and black pepper to taste
Preparation
Mash chickpeas with a potato masher or the back of a fork in a mixing bowl, add chopped celery, green onion, pickles, and garlic, and mix well
In a blender, combine the rest of the ingredients until smooth
Add the dressing to the chickpea mixture
Notes
Wrap in lavash and top with waffle-cut cucumbers for serving
