Green Goddess Chickpea Salad Wrap

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 celery stalks, finely chopped
  • 2 green onions, finely chopped
  • 1 garlic clove, minced
  • 1/4 dill pickles, finely chopped
  • 1/4 cup packed basil
  • 1/4 cup parsley
  • 1/4 cup vegan mayo
  • 1/4 cup vegan sour cream
  • 2 tablespoons water
  • 2 tablespoons tahini
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • sea salt and black pepper to taste

Preparation

  1. Mash chickpeas with a potato masher or the back of a fork in a mixing bowl, add chopped celery, green onion, pickles, and garlic, and mix well

  2. In a blender, combine the rest of the ingredients until smooth

  3. Add the dressing to the chickpea mixture

Notes

  1. Wrap in lavash and top with waffle-cut cucumbers for serving
