Korean Bbq Tempeh Burritos

Ingredients

  • lightlife foods tempeh, crumbled
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • 1 tablespoon brown sugar
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon gochujang
  • sauce of your choice (plant-based spicy mayo suggested)
  • tortilla burrito wraps
  • shredded carrots
  • steamed white rice
  • assorted herbs: green onions, basil, and cilantro

Preparation

  1. Mix the ginger, garlic, soy sauce, sesame oil, brown sugar, red pepper flakes, and gochujang to create the marinade

  2. Crumble the tempeh and coat it with the marinade

  3. Cook the tempeh mixture in a skillet over medium heat until browned and heated through

  4. Prepare steamed white rice according to package instructions

  5. Assemble the burritos by filling tortilla wraps with cooked tempeh, rice, shredded carrots, assorted herbs, and sauce of choice
