Miso Soba Noodle Bowl

Ingredients

  • 1 cup vegetable broth
  • 1 cup water
  • 2 dried shiitake mushrooms
  • 1 clove garlic, minced
  • 1 tsp miso paste
  • 1 tbsp tamari
  • 1 serving size of soba noodles

Sides

  • edamame
  • kabocha squash
  • broccoli

Garnishes

  • sesame seeds
  • green onions

Preparation

  1. Cook soba noodles according to package instructions

  2. Microwave edamame until heated through

  3. Steam broccoli and kabocha squash until tender

  4. In a pot, bring vegetable broth and water to a low boil

  5. Add dried shiitake mushrooms and minced garlic and cook for at least 5 minutes

  6. Add tamari and turn off the heat

  7. Remove some of the broth to a small bowl, dissolve miso paste in it, then return to the pot and stir well

  8. To assemble, add cooked soba noodles to a serving bowl and pour broth over top

  9. Add sides and garnishes as desired

Notes

  1. Soba noodles are made from buckwheat and symbolize luck and longevity in Japanese culture

  2. They can be enjoyed warm or cold, such as in refreshing summer preparations
