Padang Green Chili Chicken

Ingredients

  • 1 kg chicken
  • 500 ml thick coconut milk
  • 2 bay leaves
  • 2 turmeric leaves
  • 1 star anise
  • 3 cloves
  • 2 cm cinnamon stick

Ground spices

  • 100 g green curly chilies
  • 10 shallots
  • 4 garlic cloves
  • 1 piece ginger
  • 1 piece turmeric
  • 1 piece galangal
  • 1 kaffir lime leaf
  • 1 tsp coriander
  • 1/4 tsp cumin
  • salt

Preparation

  1. Fry the cut chicken for about 1 minute until not dry, then set aside.

  2. Sauté the ground spices excluding green chilies and all other spices until fragrant.

  3. Once the spices are half-cooked, add the ground green chilies and optional seasoning.

  4. Add the coconut milk and stir continuously until it boils to prevent curdling. After boiling, add the chicken and cook until the oil separates. Optionally, add potatoes as desired.

Tips

  1. Serve with cucumber slices for enhanced flavor.
