Indonesian Banjarese Chicken Soup

Ingredients

  • 800g chicken breast
  • 3 star anise
  • 5 cloves
  • 1 cinnamon stick
  • 1/2 nutmeg
  • ground pepper
  • salt
  • sugar

Ground spices

  • 12 red shallots
  • 6 garlic cloves
  • 3 fried candlenuts
  • 3cm ginger

Additional seasonings

  • 2 tbsp mashed boiled potato
  • 1 tbsp powdered milk

Accompaniments

  • rice cakes (lontong or ketupat)
  • glass noodles
  • potato fritters
  • shredded chicken
  • boiled eggs
  • melinjo crackers
  • chili sauce

Preparation

  1. Wash chicken then boil until half cooked. Sauté ground spices until fragrant, add spices star anise, nutmeg, cloves and cinnamon. Sauté until fully cooked

  2. Add the sautéed spices to the chicken boil. Season with salt, sugar, ground pepper, check taste. Cook until chicken is done. Remove chicken, place in container, shred it

  3. Add additional seasonings to the pot, stir evenly, check taste. Add fried garlic that is mashed. Stir evenly, turn off heat and serve

Serving

  1. Arrange rice cakes in bowl. Add glass noodles, shredded chicken, pieces of potato fritters and boiled eggs

  2. Pour soup over, then add melinjo crackers, fried shallots and celery leaves
