Easy Malaysian Chicken Stew

Ingredients

  • Chicken, cut into small pieces
  • 1 onion, sliced
  • 2 garlic cloves, smashed
  • 1-inch piece ginger, finely sliced
  • Cinnamon stick
  • Star anise
  • Cloves
  • Cardamom pods
  • 1 tablespoon oyster sauce
  • 1 tablespoon sweet soy sauce
  • 1 tablespoon tomato sauce
  • 1 tablespoon ground black pepper
  • Water, as needed
  • 1 potato, cubed
  • 1 daikon or turnip, cubed
  • 1 chicken bouillon cube
  • Salt, to taste
  • Sugar, to taste
  • 1 tomato, quartered
  • Bird's eye chili, halved
  • Cornstarch slurry, as needed
  • Green onions, for garnish

Preparation

  1. Sauté the aromatics until fragrant.

  2. Add the sauces and stir briefly.

  3. Add the chicken and simmer until partially tender.

  4. Add potatoes, daikon, chicken bouillon, salt, sugar, and water as needed.

  5. Once vegetables are tender, add tomato, bird's eye chili, and cornstarch slurry to thicken the sauce.

  6. Garnish with green onions when serving.
