Raw Veggie Curry Stew with Spicy Sauce
Ingredients
- 100g cashews
- 1-2 Roma tomatoes
- handful of cilantro
- 30g sun dried tomatoes
- dash of red chili flakes
- 2 garlic cloves
- 1 Tbs tamari sauce
- juice of 1 lime
- 1/4 tsp paprika
- 25g toasted coconut flakes or coconut meat
- a pinch of cumin
- 1/4 tsp curry powder
- salt and pepper to taste
Preparation
Blend all the ingredients together until smooth.
Add water until the desired consistency if the sauce gets too thick.
Pick your favorite vegetables, either raw or cooked.
Throw the vegetables in a bowl and add the spicy sauce.
