Refreshing Chickpea Salad with Herbs
Ingredients
- 1 bell pepper
- 10-15 cherry tomatoes
- 1 can chickpeas
- 1/2-1 red onion
- Parsley
- Coriander
- Lime juice
- Salt and pepper
Preparation
Chop the bell pepper, cherry tomatoes, and red onion
Drain and rinse the chickpeas
Chop the parsley and coriander
In a large bowl, combine all the ingredients
Add lime juice, salt, and pepper to taste, and mix well
