Spiced Cauliflower and Potato Fritters with Basmati Rice
Ingredients
Cauliflower mixture
- 2 cups grated cauliflower
- 2 tablespoons corn oil
- 3 medium boiled potatoes, cut
- 1/4 cup breadcrumbs
- 2 tablespoons starch
- 1 teaspoon salt
- 1/2 teaspoon garam masala
- 1/2 teaspoon curry powder or mixed spices
- 1/2 teaspoon black pepper
- 1/2 teaspoon crushed chili
- 1/2 teaspoon paprika
Rice pilaf
- 2 cups basmati rice
- 1 tablespoon ghee
- 1/4 cup cashews, halved
- 2 bay leaves
- 1 teaspoon whole cumin
- 1 teaspoon whole coriander
- 1 teaspoon turmeric
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons coconut
- 1/2 cup chopped cilantro
- 3 cups water
- 1/4 cup corn oil
Preparation
Mix all cauliflower mixture ingredients together in a bowl and form into patties or balls
Heat corn oil in a skillet over medium heat and fry the patties until golden brown on both sides
For the rice, heat ghee and corn oil in a pot over medium heat
Add cashews, bay leaves, cumin, and coriander; sauté until fragrant
Stir in turmeric, salt, and black pepper, then add basmati rice and water
Bring to a boil, then reduce heat, cover, and simmer until rice is cooked and water is absorbed
Stir in coconut and chopped cilantro before serving
Serve the cauliflower fritters with the spiced rice pilaf
