Spiced Chicken Sandwiches with Vegetables
Ingredients
- 1 tablespoon corn oil or olive oil
- 4 large chicken fillet pieces, cut into small cubes
- 1 medium onion
- 2 cloves garlic, crushed
- 1 large sweet green pepper, cut into thin strips
- 1 tablespoon vinegar
- 1 tablespoon lemon juice
- 2 tablespoons mayonnaise
- 2 tablespoons yogurt
- 1 teaspoon mustard paste
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon ginger powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon mixed spices
- 1 teaspoon finely chopped coriander
For serving
- Large pita bread
- Tomato slices
- Chopped lettuce
Preparation
In a wide skillet, put the oil and place it on medium heat.
Add the chicken pieces and stir with a wooden spoon for several minutes until the water evaporates and it is fully cooked.
Add the onion, garlic, and green pepper, then stir until their aroma rises.
Add the vinegar, lemon juice, mayonnaise, yogurt, and mustard, then stir for one or two minutes.
Add the salt, black pepper, ginger powder, garlic powder, onion powder, mixed spices, and coriander, then stir until their aroma rises.
Open the pita bread from one side, keeping the opposite side attached.
Place several lettuce slices in the sandwich, add a generous amount of the chicken mixture, spread tomato slices, and serve immediately.
