Beef Shawarma with Tahini Sauce

Ingredients

  • Approximately 1 kg beef

Tahini sauce

  • 1 cup tahini
  • 4/3 cup water
  • 4/1 cup lemon juice
  • 2 tablespoons vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin

Marinade

  • 4 large garlic cloves, minced
  • 4/1 cup olive oil
  • 1/3 cup vinegar
  • 1 tablespoon meat spices
  • 1 tablespoon ground dry coriander
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1 tablespoon salt
  • 1 medium tomato, chopped
  • 1/2 large green pepper, sliced

Serving

  • 1 large onion
  • 1/2 cup vinegar
  • 3-5 tablespoons sumac
  • Approximately 1 cup chopped parsley
  • Lebanese bread or saj bread
  • Pickles

Preparation

  1. Slice the meat into thin longitudinal strips and set aside.

  2. For the meat marinade: In a deep glass bowl, place the garlic, oil, vinegar, spices, coriander, black pepper, turmeric, cinnamon, and salt, mix the ingredients well together then add the meat pieces, mix until the pieces are covered with the marinade, cover the bowl and leave it in the refrigerator for several hours or overnight.

  3. Bring a medium-sized skillet, place the meat without the marinade mixture, stir over high heat until it dries completely, add the marinade mixture, add 1 cup of water, reduce the heat and leave the meat on low heat until it cooks, then stir over high heat until it dries completely.

  4. Add the tomato, bell pepper slices, stir over high heat for a few minutes until the pepper wilts, remove the shawarma from the heat and keep it warm.

  5. For the tahini sauce: Place the ingredients in a deep bowl and using a fork or hand whisk, whisk until the sauce forms; if it is thick, add more water and set aside.

  6. Peel the onion and cut it into thin slices, place it in a deep bowl, add vinegar to it, let it soak for about 10 minutes, remove it from the vinegar before placing it in the sandwiches.

  7. For serving: Open the bread loaves, brush them with a little tahini sauce, place some shawarma meat in them, add some onion slices, then sprinkle some sumac and some parsley, wrap the loaf around the shawarma well, place it on a serving plate and enjoy, serve with a variety of pickles.
