Stir-Fried Noodles with Soy Curls and Veggies

Ingredients

  • Soy curls
  • Udon noodles
  • Loads of veggies
  • Fistfuls of cilantro
  • @the_ginger_people spicy ginger teriyaki sauce

Sauce

  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 2 tablespoons @the_ginger_people minced ginger
  • 1 tablespoon lime juice
  • 3 cloves garlic, minced
  • 1/4 cup water
  • *1 tablespoon corn starch (optional, for thickening)

Preparation

  1. Soak soy curls in warm water for 10 minutes, then drain and squeeze lightly

  2. Sauté the soy curls in a pan for 10 minutes until cooked

  3. Prepare the sauce by mixing all sauce ingredients together

  4. Cook udon noodles according to package instructions if not pre-cooked

  5. Stir-fry veggies in a pan or wok until slightly softened

  6. Combine all ingredients in the pan, add sauce, and heat through until well mixed

Tips

  1. Season the soaking water for soy curls with dark soy sauce for color and flavor
