Super Fluffy Pancakes
Ingredients
- 130g wheat flour
- 1/4 teaspoon vanilla powder or vanilla cream
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon fine salt
- 1.5 tablespoons granulated sugar
- 1 beaten egg
- 130-150ml buttermilk (or substitute with milk mixed with 2 tablespoons lime juice and let sit for 10 minutes)
- 2 tablespoons melted butter
- A little margarine for greasing the pan
Preparation
Combine all dry ingredients and mix well.
Add egg, buttermilk, and melted butter. Stir until combined, do not overmix to avoid tough pancakes.
Heat a non-stick pan over medium heat. Grease with a little margarine and pour batter as needed.
When bubbles form, flip and cook until golden brown.
Remove and enjoy with favorite toppings. These pancakes are also good plain.
Tips
If no vanilla powder or cream, you can use 1/2 teaspoon vanilla essence.
