Quick and Light Pancakes

Ingredients

  • 3 eggs
  • 20 g granulated sugar
  • 200 g self-rising flour
  • 35 g seed oil
  • 260 ml water
  • 1 vanilla bean
  • butter

For serving

  • maple syrup
  • whipped cream
  • berries

Preparation

  1. Mix the eggs, sugar, oil, water, and vanilla in a bowl to form a batter.

  2. Add the self-rising flour and stir until smooth and well combined.

  3. Heat a skillet or griddle over medium heat and melt some butter.

  4. Pour portions of the batter onto the hot surface to form pancakes and cook until bubbles appear on the surface and the edges set.

  5. Flip the pancakes and cook until golden brown on the other side.

  6. Remove from heat and serve immediately.
