Sweet Lime Glazed Tofu

Ingredients

  • 2 blocks extra firm tofu (around 240g each)
  • 1 heaping tbsp corn starch
  • 1/2 tsp salt
  • 1/2 cup bell pepper
  • 1 onion
  • 2 tbsp canola oil

Glaze

  • 3 1/2 tbsp maple syrup
  • 2 tbsp liquid aminos
  • 3 tbsp lime juice
  • 2 cloves garlic, minced
  • 1/2 tbsp corn starch diluted in 1 tbsp water

Preparation

  1. Dry the tofu and cut into cubes by wrapping in towels and placing a plate on top until excess liquid is absorbed.

  2. Sprinkle the salt on the tofu cubes, add the cornstarch, and coat the tofu well.

  3. In a bowl, mix all the ingredients for the glaze.

  4. In a pan, heat around 1.5 tablespoons of oil and fry the tofu cubes until crisp and golden, turning as needed.

  5. Remove the tofu and sauté the onions and bell peppers in a little oil.

  6. Add the glaze ingredients except the cornstarch mixture to the pan.

  7. Cook the sauce until it boils, then lower the heat and add the cornstarch mixture; mix until thick.

  8. Add the tofu back in and cook until the sauce is well incorporated.

  9. Serve with a bowl of rice or noodles and enjoy while hot.
