Vegan Banana Kale Muffins
Ingredients
- 2 cups flour
- 2 tsp saigon cinnamon
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup plant based butter, melted
- 3/4 cup flaxmilk
- 1/2 organic maple syrup
- 2 large bananas
- 8 oz kale, chopped
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
Preparation
Preheat oven to 350 F
Spray muffin pan with avocado oil
Combine melted butter, Flaxmilk, maple syrup, bananas, kale, apple sauce, and vanilla extract in a food processor and blend until completely puréed
In a large bowl, add all of the dry ingredients and fold the wet ingredients until just combined
Do not over mix
Spoon batter into the muffin pan and bake for 12-15 minutes for mini muffins and 18-22 minutes for standard muffins
Sprinkle with additional cinnamon
Cool before serving
