Vegan Banana Kale Muffins

Ingredients

  • 2 cups flour
  • 2 tsp saigon cinnamon
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup plant based butter, melted
  • 3/4 cup flaxmilk
  • 1/2 organic maple syrup
  • 2 large bananas
  • 8 oz kale, chopped
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract

Preparation

  1. Preheat oven to 350 F

  2. Spray muffin pan with avocado oil

  3. Combine melted butter, Flaxmilk, maple syrup, bananas, kale, apple sauce, and vanilla extract in a food processor and blend until completely puréed

  4. In a large bowl, add all of the dry ingredients and fold the wet ingredients until just combined

  5. Do not over mix

  6. Spoon batter into the muffin pan and bake for 12-15 minutes for mini muffins and 18-22 minutes for standard muffins

  7. Sprinkle with additional cinnamon

  8. Cool before serving
