Vegan Bangers and Mash with Roasted Vegetables
Ingredients
- Vegan Lincolnshire sausages
- Potatoes
- Beetroot
- Tenderstem broccoli
- Carrots
- Red onion
- Extra virgin olive oil
- Organic soya milk
- Pink salt
- Black pepper
Preparation
Roast the beetroot, tenderstem broccoli, and carrots in the oven until tender.
Cook the vegan sausages by frying or baking until browned.
Boil the potatoes with skins on until soft, then mash with extra virgin olive oil, organic soya milk, pink salt, and black pepper.
Fry the red onion until golden and caramelized.
Assemble by serving the mashed potatoes topped with sausages, roasted vegetables, fried onion, and thick gravy.
Notes
Leaving the skins on the potatoes adds extra fiber and nutrients.
