Vegan Cashew and Date Energy Balls
Ingredients
- 100g cashews
- 4 tbsp oat flakes
- 6 dates
- 40g grated coconut
- 3 tbsp cacao powder
- 75 ml maple syrup
- 15 ml water (optional)
Coating
- grated coconut, chia seeds or sesame
Preparation
Mix all ingredients together in a food processor or by hand until well combined.
Adjust consistency with water if the mixture is too dry or crumbly.
Form the mixture into small balls using your hands.
Roll the balls in the coating to cover them evenly.
Tips
Water quantity may vary depending on the moisture content of the dates and other ingredients.
These energy balls are best stored in an airtight container in the refrigerator for freshness.
