Gooey Apricot and Date Flapjacks

Ingredients

  • 200g oats
  • 150g mixed nuts
  • 2 large handfuls dried apricots
  • 1 handful dates
  • 1 cup water
  • 50g nut butter of choice
  • 2-3 tbsp maple syrup (optional)

Preparation

  1. Soak dates and apricots for 10 minutes in hot water, then blend with about 1 cup water until you have a thick fruit paste.

  2. Add oats and nuts to a bowl and stir in the fruit paste.

  3. Add the nut butter and optionally the maple syrup.

  4. Stir well and then press into a baking sheet.

  5. Bake for 25 minutes until golden brown.
