Sweet Cinnamon Oats with Stewed Plums and Walnuts
Ingredients
- oats
- water
- handful of chopped dates
- generous dash of cinnamon
- pinch of sea salt
- plums
- few teaspoons of water
- optional: chopped dates or apricots
- optional: maple syrup
- coconut milk
- walnuts
- pumpkin seeds or other nuts and seeds
Preparation
In a saucepan, combine oats, water, a handful of chopped dates with pits removed, a generous dash of cinnamon, and a pinch of sea salt.
Cook the oat mixture until soft and creamy.
For the plums, cut them in half, remove the pit, and add to a saucepan with a few teaspoons of water.
Simmer the plums with the lid on for 5-10 minutes until they reach desired softness.
Optionally, add chopped dates, apricots, or maple syrup to the plums for extra sweetness.
Serve the oats topped with stewed plums, a drizzle of coconut milk, and crunchy nuts or seeds like walnuts or pumpkin seeds.
Tips
For a tangy contrast, keep plums unsweetened if the oats are sweet.
Substitute coconut milk with any milk of your choice.
Experiment with different nuts and seeds such as hazelnuts, almonds, pecans, sunflower seeds, or hemp hearts for added crunch.
