Vegan Deconstructed Sushi Bowl
Ingredients
- Chopped heart of palm
- 2 tablespoons vegan mayo
- 2 teaspoons Old Bay seasoning
- 1 teaspoon kelp powder
- Avocado
- Pickled ginger
- Sushi ginger
- Carrot sheets
- Nori
- Sushi rice
- Toasted sesame seeds
- Sriracha mayo (made with vegan mayo)
- Alfalfa sprouts
- Cilantro
- Mixed greens
- Fried panko-crusted jackfruit balls
Preparation
Cook sushi rice according to package instructions and mix with toasted sesame seeds.
Prepare heart of palm tuna by mixing chopped heart of palm, vegan mayo, Old Bay seasoning, and kelp powder.
Fry panko-crusted jackfruit balls until golden and crispy.
Assemble the bowl by layering mixed greens as a base, then add sushi rice, heart of palm tuna, jackfruit balls, sliced avocado, pickled ginger, sushi ginger, carrot sheets, torn nori, Sriracha mayo, alfalfa sprouts, and chopped cilantro.
