Vegan Fruits and Legumes Salad
Ingredients
- baby spring greens
- green grapes
- dark red kidney beans
- chickpeas
- nectarines
- kale microgreens
- great northern beans
- sapphire grapes
- charred corn
- red bell pepper
- avocado with hemp seeds
- red pepper flakes
- black sesame seeds
- scallions
Preparation
Start with a base of baby spring greens in a bowl.
Top with green grapes, dark red kidney beans, chickpeas, nectarines, kale microgreens, great northern beans, sapphire grapes, charred corn, red bell pepper, avocado with hemp seeds, red pepper flakes, black sesame seeds, and scallions.
Toss gently if desired and serve immediately.
