Watermelon Tofu Feta Salad
Ingredients
- 1 block extra firm tofu
- 1/2 watermelon
- 2 tablespoons olive oil
- 1 tablespoon nutritional yeast
- 1 teaspoon mixed herbs
- Pinch of salt
- Juice of 1/2 lemon
- 20 ml apple cider vinegar
- Salt for finishing
- Lime for finishing
- Chopped mint
- Chopped parsley
Preparation
Mix olive oil, nutritional yeast, mixed herbs, a pinch of salt, lemon juice, and apple cider vinegar to create a marinade.
Cut the tofu into cubes and coat with the marinade, allowing it to absorb flavors.
Cut the watermelon into cubes.
Combine the marinated tofu and watermelon in a bowl.
Season with additional salt and lime juice, and sprinkle with chopped mint and parsley.
