Watermelon Tofu Feta Salad

Ingredients

  • 1 block extra firm tofu
  • 1/2 watermelon
  • 2 tablespoons olive oil
  • 1 tablespoon nutritional yeast
  • 1 teaspoon mixed herbs
  • Pinch of salt
  • Juice of 1/2 lemon
  • 20 ml apple cider vinegar
  • Salt for finishing
  • Lime for finishing
  • Chopped mint
  • Chopped parsley

Preparation

  1. Mix olive oil, nutritional yeast, mixed herbs, a pinch of salt, lemon juice, and apple cider vinegar to create a marinade.

  2. Cut the tofu into cubes and coat with the marinade, allowing it to absorb flavors.

  3. Cut the watermelon into cubes.

  4. Combine the marinated tofu and watermelon in a bowl.

  5. Season with additional salt and lime juice, and sprinkle with chopped mint and parsley.
