Double Chocolate Crispy Bars with Quinoa

Ingredients

  • 9 Emmy's cocoa cookies
  • 2/3 cup almond butter
  • 2/3 cup puffed quinoa (or puffed rice)
  • 1/3 cup cocoa powder
  • chocolate for melting

Preparation

  1. Mix together all ingredients except the chocolate.

  2. Layer the mixture into a bread pan.

  3. Top with melted chocolate.

  4. Refrigerate for at least 2 hours.

  5. Store in the refrigerator.
