No Bake Peanut Butter Chocolate Oat Cups

Ingredients

  • 1 cup old fashioned rolled oats
  • 1/4 cup almond flour
  • 1 cup runny peanut butter
  • 1/2 cup maple syrup
  • 1/2 teaspoon sea salt
  • 1 teaspoon vanilla
  • 1/4 cup collagen

Chocolate topping

  • 1/2 cup chocolate chips
  • 2 tablespoons peanut butter

Preparation

  1. Mix all the ingredients together with a spatula.

  2. Grease a muffin tin; this recipe makes about 10 cups.

  3. Fill the cups about three-quarters full, leaving room for the peanut butter chocolate topping.

  4. Place in the freezer for 1 to 1.5 hours.

  5. Melt the chocolate topping in the microwave for 30 seconds, stir, and repeat if needed.

  6. Add the chocolate topping and smooth it out with a knife.

  7. Place back in the freezer for 30 minutes.

  8. Store in the freezer or the fridge.

  1. Use gluten-free oats if needed.

  2. Opt for organic peanut butter without fillers for best results.
