No-Bake Peanut Butter Chocolate Oat Cups

Ingredients

  • 1 cup old fashioned rolled oats
  • 1/4 cup almond flour
  • 1 cup peanut butter
  • 1/2 cup maple syrup
  • 1/2 tsp sea salt
  • 1 tsp vanilla
  • 1/4 cup collagen

Chocolate peanut butter topping

  • 1/2 cup chocolate chips
  • 2 tbsp peanut butter

Preparation

  1. Mix all the ingredients together with a spatula.

  2. Grease a muffin tin.

  3. Fill the muffin cups about three-quarters full, leaving room for the topping. This should make about 10 cups.

  4. Place in the freezer for 1 to 1.5 hours.

  5. Melt the chocolate peanut butter topping in the microwave by combining the ingredients, heating for 30 seconds, stirring, and repeating if necessary.

  6. Add the topping to the oat cups and smooth it out with a knife.

  7. Place back in the freezer for 30 minutes.

Storage

  1. Store the oat cups in the freezer or the fridge.
