Chocolate Covered Almond Flour Cookies

Ingredients

  • 1 cup almond flour
  • 2 Tbsp coconut oil
  • 2 Tbsp maple syrup
  • 1 tsp vanilla
  • pinch of sea salt
  • about 7 tsp peanut butter
  • 1 cup chocolate chips
  • 2 tsp coconut oil

Preparation

  1. In a bowl, add almond flour, coconut oil, maple syrup, vanilla, and sea salt. Mix well.

  2. Make round cookies and create dimples in the middle with your thumbs.

  3. Bake for 15 minutes until golden.

  4. Remove and let cool completely.

  5. Add a dollop of peanut butter to each cookie.

  6. Place in the freezer for 15 minutes.

  7. Melt the chocolate chips together with the coconut oil.

  8. Cover each cookie on all sides with the melted chocolate.

  9. Return to the freezer for 15 minutes.

  10. Enjoy!
