No-Bake Pistachio Oat Cookies

Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 1/2 cup full-fat milk
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup pistachio cream (smooth or chunky)
  • 1 teaspoon ground cardamom
  • 1/2 cup oats
  • 1/2 cup raisins
  • 1/2 cup chopped dried apricots
  • 1/2 cup chopped dried figs
  • 1/2 cup pistachios

Preparation

  1. Prepare a wide tray with a piece of parchment paper.

  2. In a saucepan, combine butter, sugar, milk, cocoa powder, and salt. Place over medium heat and stir with a wooden spoon until it boils. Let it boil for one minute, then remove from heat.

  3. Add the pistachio cream and stir until it is mixed and melted.

  4. Add the ground cardamom, oats, raisins, chopped dried apricots, and pistachios, and stir to combine. Add the oats gradually until you achieve a cohesive mixture, depending on the type of oats and pistachio cream used. It is best to let the mixture rest for a few minutes to allow the oats to absorb moisture, then add more oats if necessary.

  5. Using a large spoon, scoop portions of the mixture and place them on the tray to form disks.

  6. Sprinkle a little raisins, chopped dried apricots, chopped dried figs, and pistachios on top of each cookie.

  7. Leave on the counter for about an hour to dry completely and set. This cookie does not require baking in the oven.

  8. Preferably store in the refrigerator, and remove it before serving to bring it to room temperature.

Tips

  1. Adjust the amount of oats based on the consistency of the mixture for best results.
