Pistachio and Dried Fruit Biscuits
Ingredients
- 1/2 cup fine-grained sugar
- 3/4 cup butter
- 1/2 teaspoon salt
- 1 teaspoon liquid vanilla
- 1 cup flour
- 3/4 cup pistachios
- 3/4 cup chopped dried fruits
Preparation
In the mixer bowl, place the sugar, butter, salt, and vanilla, attach the mixing beater, and turn on at medium speed for 2 to 3 minutes.
Add the flour, pistachios, and fruits, and turn on at medium speed until the dough forms.
Cut the dough into two parts, shape each part into a cylinder then into a triangle, wrap in plastic, and place in the refrigerator for one hour.
Position the rack in the middle of the oven, preheat the oven to 180°C, prepare shallow baking sheets, and place a piece of parchment paper in them.
Remove the plastic from the dough, use a sharp knife to cut the cylinder into triangles about 1/2 cm thick, and place the triangles in the baking sheets leaving 1 inch between each.
Place the baking sheets in the oven for 20 minutes until the bottom is light golden.
Remove the biscuits from the oven, place on a wire rack to cool completely, and then serve.
