Raw Cookie Dough Caramel Slice

Ingredients

Cookie dough

  • 1 cup almond flour
  • 2 tbsp almond milk
  • 2 tbsp sugar-free maple syrup
  • 1 tsp vanilla
  • 1 tbsp coconut oil
  • 1 tsp nut butter
  • choc chips

Caramel

  • 1/2 cup nut butter
  • 2 tbsp rice malt syrup
  • 2 tbsp coconut oil

Choc topping

  • 3 tbsp cocoa
  • 3 tbsp coconut oil
  • 2 tbsp rice malt syrup

Preparation

Cookie dough

  1. Combine all ingredients in a bowl.

  2. Press into a lined pan and freeze for at least 30 minutes.

Caramel

  1. Add ingredients to a food processor and blend until combined. Do not overblend.

  2. Spread caramel evenly over the cookie dough and freeze for 30 minutes.

Choc topping

  1. Whisk together cocoa powder and coconut oil.

  2. Whisk in rice malt syrup.

  3. Pour over the caramel and freeze until set.

Storage

  1. Store in the freezer.

  2. Slice and enjoy your raw cookie dough caramel slice.
