Vegan Raw Millionaire Bites
Ingredients
Base
- 1 cup oats
- 2 tbsp coconut oil, melted
- 1 tbsp maple syrup
- 1 tsp vanilla extract
Middle
- 2/3 cup medjool dates (soaked in hot water for 1 hour)
- 2 tbsp almond butter
- 4 tbsp water or almond milk
Top
- 80g dark chocolate
- 1 tbsp coconut oil
- 1/4 tsp vanilla extract
Preparation
Line a baking tin with greaseproof paper. In a food processor, grind the oats into a flour, then add remaining base ingredients and blend.
Spread this onto the tray and use the back of a spoon to press down the mixture. Place in the freezer to set.
Add the dates, almond butter and water to a food processor and pulse until a smooth sticky paste forms. Spread this over the oat base and return to freezer.
Melt the chocolate with the coconut oil and vanilla, and pour this over the date mixture. Place in the fridge for at least 1-2 hours to set before slicing. Enjoy.
