Chickpea Soup with Tahini
Ingredients
- 1 cup yogurt
- 1/4 cup tahini
- 1 large egg
- 1 tablespoon starch
- 5 cups broth
- 1 cup cooked chickpeas
- 1 clove crushed garlic
For serving
- olive oil
- fried pine nuts
Preparation
In a deep pot, place the yogurt, tahini, egg, and starch, and mix with a hand whisk until well combined.
Place the pot on medium heat and stir with a wooden spoon until the mixture starts to boil, then add the broth and continue stirring until it boils and ingredients are combined.
Add the chickpeas and garlic, and cook for 10 minutes while stirring to prevent separation.
Pour the soup into a deep serving bowl, sprinkle with fried pine nuts, and serve.
