Coconut Ginger Rice Pudding
Ingredients
- 1 cup rice
- 1 ripe banana, mashed
- 1 1/3 cup coconut milk
- 1/2 cup almond milk
- 1/2 tsp fresh ginger
- 1/2 tsp turmeric
- 1/2 tsp pumpkin spice mix
- 1 tbsp shredded coconut
- A pinch of salt
- 1 1/2 cup fresh berries
Preparation
Bring the rice, mashed banana, coconut milk, almond milk, fresh ginger, spices, shredded coconut, and salt to a boil and cook for 10-15 minutes until the rice absorbs the milk and the pudding thickens.
Mash 3/4 of the berries with a fork or blend them.
Divide the berry compote into glasses.
Divide the rice pudding over the compote and top with the remaining berries.
