Coconut Ginger Rice Pudding

Ingredients

  • 1 cup rice
  • 1 ripe banana, mashed
  • 1 1/3 cup coconut milk
  • 1/2 cup almond milk
  • 1/2 tsp fresh ginger
  • 1/2 tsp turmeric
  • 1/2 tsp pumpkin spice mix
  • 1 tbsp shredded coconut
  • A pinch of salt
  • 1 1/2 cup fresh berries

Preparation

  1. Bring the rice, mashed banana, coconut milk, almond milk, fresh ginger, spices, shredded coconut, and salt to a boil and cook for 10-15 minutes until the rice absorbs the milk and the pudding thickens.

  2. Mash 3/4 of the berries with a fork or blend them.

  3. Divide the berry compote into glasses.

  4. Divide the rice pudding over the compote and top with the remaining berries.
