Vegan Blueberry Cheesecake Pancakes

Ingredients

For the pancakes

  • 1 1/2 cups oats from @quakernl
  • 1 1/4 cup almond milk
  • 1 ripe banana
  • 1 cup (frozen) blueberries

For the cheesecake filling

  • 1 cup coconut yogurt

Preparation

  1. Put all pancake ingredients in a food processor and mix until smooth batter.

  2. Heat some oil in a pan and cook the pancakes for 3 minutes per side.

  3. Stack the pancakes and spread the coconut yogurt over them.

  4. Finish with your favorite toppings and serve.
