Vegan Blueberry Cheesecake Pancakes
Ingredients
For the pancakes
- 1 1/2 cups oats from @quakernl
- 1 1/4 cup almond milk
- 1 ripe banana
- 1 cup (frozen) blueberries
For the cheesecake filling
- 1 cup coconut yogurt
Preparation
Put all pancake ingredients in a food processor and mix until smooth batter.
Heat some oil in a pan and cook the pancakes for 3 minutes per side.
Stack the pancakes and spread the coconut yogurt over them.
Finish with your favorite toppings and serve.
