Blue Marbled Coconut Chia Pudding

Ingredients

  • 3 teaspoons blue spirulina
  • 2 tablespoons chia seeds
  • 1/2 cup coconut milk or other plant-based milk
  • 2 tablespoons coconut yogurt
  • 3 teaspoons coconut nectar
  • 2 teaspoons desiccated coconut
  • 1 cup frozen or fresh berries

Preparation

  1. Soak 2 tablespoons chia seeds in 1/2 cup coconut milk or other plant-based milk and let it sit to form a pudding consistency.

  2. To make the berry coulis, add 1 cup berries to a pan on low heat, squish the berries, add 2 teaspoons sweetener and 3 teaspoons blue spirulina, and cook until combined.

  3. Mix the remaining ingredients—2 tablespoons coconut yogurt, 3 teaspoons coconut nectar, and 2 teaspoons desiccated coconut—with the soaked chia seeds to make the coconut chia pudding.

  4. Layer or swirl the berry coulis and coconut chia pudding to create a marbled effect.
