Blue Marbled Coconut Chia Pudding
Ingredients
- 3 teaspoons blue spirulina
- 2 tablespoons chia seeds
- 1/2 cup coconut milk or other plant-based milk
- 2 tablespoons coconut yogurt
- 3 teaspoons coconut nectar
- 2 teaspoons desiccated coconut
- 1 cup frozen or fresh berries
Preparation
Soak 2 tablespoons chia seeds in 1/2 cup coconut milk or other plant-based milk and let it sit to form a pudding consistency.
To make the berry coulis, add 1 cup berries to a pan on low heat, squish the berries, add 2 teaspoons sweetener and 3 teaspoons blue spirulina, and cook until combined.
Mix the remaining ingredients—2 tablespoons coconut yogurt, 3 teaspoons coconut nectar, and 2 teaspoons desiccated coconut—with the soaked chia seeds to make the coconut chia pudding.
Layer or swirl the berry coulis and coconut chia pudding to create a marbled effect.
