Chia Parfait with Colorful Layers
Ingredients
- 2 tbsp chia seeds
- 1 cup coconut milk
- agave syrup
Top layer
- soy yoghurt
- pink pitaya powder
- blue spirulina
Toppings
- frozen raspberries or blackberries
- hemp seeds
Preparation
Mix chia seeds, coconut milk, and agave syrup in a bowl and refrigerate for at least 2 hours until set.
In a separate bowl, combine soy yoghurt with pink pitaya powder for a pink layer or blue spirulina for a blue layer.
Layer the chia pudding in a glass or bowl, add the colored yoghurt on top, and sprinkle with frozen berries and hemp seeds.
