Chia Parfait with Colorful Layers

Ingredients

  • 2 tbsp chia seeds
  • 1 cup coconut milk
  • agave syrup

Top layer

  • soy yoghurt
  • pink pitaya powder
  • blue spirulina

Toppings

  • frozen raspberries or blackberries
  • hemp seeds

Preparation

  1. Mix chia seeds, coconut milk, and agave syrup in a bowl and refrigerate for at least 2 hours until set.

  2. In a separate bowl, combine soy yoghurt with pink pitaya powder for a pink layer or blue spirulina for a blue layer.

  3. Layer the chia pudding in a glass or bowl, add the colored yoghurt on top, and sprinkle with frozen berries and hemp seeds.
