Vegan Butterfly Pea Chia Parfait

Ingredients

Butterfly pea yoghurt layer

  • 250 g coconut yoghurt
  • 50 g blueberries
  • 3 tbsp rolled oats
  • 1 tsp butterfly pea powder
  • 1 tsp maple syrup

Chia pudding layer

  • 1 cup coconut milk
  • 4 tbsp chia seeds
  • 1 tbsp agave syrup

Yoghurt layer

  • coconut yoghurt or Greek yoghurt

Granola layer

  • chocolate granola

Berry topping

  • berries

Preparation

  1. Prepare the butterfly pea yoghurt by mixing all ingredients for that layer.

  2. Make the chia pudding by combining coconut milk, chia seeds, and agave syrup, then let it sit until thickened, about 15-30 minutes.

  3. Assemble the parfait in layers starting with the butterfly pea yoghurt, followed by chia pudding, then plain yoghurt, chocolate granola, and top with berries.

  4. Chill if desired before serving.
